Extra Virgin Olive Oil Cake

Source: Pamela Sheldon Johns

This simple and elegant cake recipe comes to us from Pamela Sheldon Johns. The crumb is light and airy with the alluring scent of extra virgin olive oil. The garnish of orange really completes the dish.

  • 3 eggs
  • 2 1/2 cups granulated sugar
  • 1 1/2 cups extra virgin olive oil
  • 1 1/2 cups milk
  • Grated zest of 3 oranges, plus one orange, sliced, for garnish
  • 2 cups unbleached all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • Pinch of salt
  • Confectioners' sugar for dusting

Preheat oven to 350 degrees.

Butter and flour a 12-inch cake pan. In a large bowl, whisk together the eggs and granulated sugar until blended. Add the olive oil, milk and orange zest and mix well. In another bowl, stir together the flour, baking powder, baking soda, and salt. Add to the egg mixture, stirring just until blended. Do not overmix. Pour the batter into the prepared pan.

Bake until a toothpick inserted into the center comes out clean, 50-55 minutes. Remove to a wire rack to cool completely. Loosen the sides with a knife and invert onto a serving plate.

Dust the cake with confectioners' sugar and cut into 12 slices. Garnish the individual servings with orange slices.

Organic Orange Slices from Marchesi di San Giuliano

The eastern coast of Sicily is home to some of the Mediterranean's most fertile lands - the warm summers and cool winters make this land ideal for citrus growing and that's precisely what the Marchesi Castello di San Giuliano and his family have been doing for 800 years.

Here they've preserved their gorgeous oranges in a luxurious syrup - the slices are gingerly hand-packed into the jars after being slowly candied. The slices make a lovely garnish for a pound cake or olive oil cake. You can also quarter the slices and perch atop a buttercream-laced cupcake. And the sweet, citrus flavors make a great complement to salty cheeses - try pairing the slices on a cheese plate with pecorino or even feta.
