Stir together fresh tomatoes, black olives, feta cheese, extra virgin olive oil and chopped fresh parsley and mint. Let marinate for a few hours and toss with the Rice Spaghetti. Or use the Rice Spaghetti in a quick Asian noodle soup. Saute ginger, garlic and scallions for a minute or two. Add chicken stock, a few tablespoons of shoyu, cilantro, shredded chicken and the noodles. Finish with a spoonful of Bomba!
