This sauce is packed with briny black olives, giving a great depth of flavor.
All of the tomato sauces are made in the same traditional way - sweating the vegetables (onions, carrots, garlic), adding fresh tomatoes (peeled and seeded), and seasoning with basil and salt. The rest is up to the flavorings (chiles for Arrabiatta, roasted peppers for Arrostiti, anchovies, tuna and capers for Puttanesca). All of the sauces are cooked for the minimum amount of time to lock in the freshness of the tomatoes.
