This is a classic washed Ethiopia, where the beans are quickly and carefully removed from the fruit, and then go through a sorting ans selection to remove defects. This process, skillfully done, emphasizes the inherent qualities of the coffee. Contrast this against naturals, where the pulp dries on the bean, layering on pronounced fruity flavor. Ours is grown at approximately 5700 feet, and exhibits Yirgacheffe characteristic: described as citric and floral. We put a medium roast on this coffee to emphasize the delicate body and subtler aromatics.
