Violas look essentially like miniature pansies, reaching only about 3/4 of an inch high. The flowers are picked at the height of their bloom and then quickly coated in sugar and dried to preserve their natural state. Ten or twenty packs include a gorgeous assortment of colors in blue, yellow, purple, orange and bi-colored flowers. Float these edible, crystallized flowers in bowls of gazpacho, top cupcakes and cakes, or embellish chocolate truffles and caramels.
