California has a perfect climate for raising sheep, who love the dry, shrubby hillside and require less water than cows. Their milk is rich, nutty, and perfectly suited to cheesemaking. San Andreas is a natural-rinded, medium-aged pecorino with a buttery, toothsome give and a rich, clean aroma. Flavors range from light, sweet butter to toasted nuts with a faintly gamey finish; a great cheese to pair with a light red or crisp white wine, or a variety of beers and spirits. Delicious with grilled asparagus or as a garnish for a salad of micro-greens and toasted walnuts with a light vinaigrette.
