Succulent Dottato black figs of Cosenza, Calabria are sundried unti half the size, then smothered in rich and dense fig syrup. Serve as an accompaniment to goat cheese or a fresh sheep's milk ricotta. Add some of the syrup to a pan sauce for pork loin or roast beef, and then incorporate slice of the figs prior ro serving. These make a great topping for gelato, as a side to a panna cotta or simply in a glass with a splash of cognac.
