We love this spicy sauce with all manner of foods, not just pasta. But it can speed up an otherwise slow-moving dinner!
Rustichella d'Abruzzo takes the basic onion and garlic base for their tomato sauce and spikes it up with a healthy shake of dried chiles. If you have a bit leftover that's not enough for a bowl of pasta, try a dollop on top of a grilled chicken breast or pork chop.
All of the tomato sauces are made in the same traditional way - sweating the vegetables (onions, carrots, garlic), adding fresh tomatoes (peeled and seeded), and seasoning with basil and salt. The rest is up to the flavorings (chiles for Arrabiatta, roasted peppers for Arrostiti, anchovies, tuna and capers for Puttanesca). All of the sauces are cooked for the minimum amount of time to lock in the freshness of the tomatoes.
