Highwire Coffee

  • This is a classic washed Ethiopia, where the beans are quickly and carefully removed from the fruit, and then go through a sorting ans selection to remove defects. This process, skillfully done, emphasizes the inherent qualities of the coffee. Contrast this against naturals, where the pulp dries on the bean, layering on pronounced fruity flavor. Ours is grown at approximately 5700 feet, and exhibits Yirgacheffe characteristic: described as citric and floral. We put a medium roast on this coffee to emphasize the delicate body and subtler aromatics.

  • Certified Fair Trade and Organic coffees blended to deliver full flavor and balance. We've been enjoying this coffee at a slightly lighter roast than most of our blends, as it highlights the crisp, bright and sweet tones and leaves a satisfyingly clean finish. It features coffee from Guatemala, Ethiopia and Sumatra. The combination of these three coffees lifts the cup to something more than the sum of its parts. This blend will change seasonally as new certified coffees become available.

  • Our signature coffee. This is a big espresso with milk chocolate notes. In milk, the sweetness shows beautifully as caramel. Designed to be equally at home in a pour over, French press or espresso machine. We started with New Guinea Sigri Estate, a coffee that has it all: full, liquid body, crisp high notes and the classic hazelnut note that keeps us coming back. We combined the Sigri with a thick, herbal and smooth semi-washed Sumatra, and an aromatic and citric fully washed coffee from Yirgacheffe, Ethiopia. The result is a coffee with a syrupy body, sweetness and completeness of flavor.

  • Our darkest roast. Though this style has fallen out of fashion in recent years, it remains a favorite among fans of caramelly, mellow cups of coffee that only a skillful dark roast provides.

  • This triple picked, wet hulled lot is grown and processed by smallholders in the Lintong district of North Sumatra at elevations between 2500-5000ft. It is a rustically produced semi-washed coffee, where the fruit is hand pulped and the beans are hulled of their parchment shells while still moist. This process yields coffees that reflect the tropics they’re grown in. Crowned Garuda is showing distinctive aromas of herbs and hard wood, with a touch of the classic Sumatra earth. It’s a big and smooth cup that stands up very well to milk, and does just fine black.

  • Intended for that cup of coffee after dinner with folks who need their sleep. Ethiopia, Guatemala and Sumatra combine to create a balanced and fully flavored cup. This coffee will change as new seasonal favorites become available.
